Cooking in the Stall

With our State Fair coming up in a couple of months I am trying to come up with some ideas for lunches that can be cooked in the stall area. We like to do lunch for our semi large group and then go out to eat for supper. 

In the past we have done Walking Tacos and Chili.  The chili is good because you can do Frito Pie one day and the next morning throw some hot dogs in and let them cook in the chili.  Any other ideas would be great.  We can't grill so it needs to be in slow cookers or electric skillets.

Hashbrown casserole, pulled pork and beef barley soup are all really good in the slow cooker and are filling too. We make it ahead and freeze it. We try to cook most of our lunches at long shows. It saves money and tastes way better than most of the bought stuff.

(if you don't already know--) Use the slow cooker plastic liners in the crock pots.... sure makes clean up handy!  Have fun!  We did biscuits & gravy (made the gravy night before, and heated in crockpot) one morning, stews/chilis in the afternoons.  Also carried an electric skillet and made bacon/eggs one morning.

Try 2 packages smoked sausage cut up into chunks.  About 2 lbs red potatoes-if large quarter them. I bag frozen green beans.  About a cup of water.  Put in a pot on low all day or High for half the day until the potatoes are done.  the size of the potatoe determines the cooking time.  Need it to go fast, you just cut the potatoes smaller.  Sausage seasons everything and you end up with a one bowl meal. 

If wanting chicken for tacos here is a very easy way to so it.  4 -5 boneless skinless chicken breast.  One package each of Hidden Valley Ranch dry dressing mix and one Taco seasoning dry mix.  Pour over chicken breasts in crock pot and cook until chicken pulls apart.  High 4 hours  Low about 6. 

Taco soup
4 cans of beans-pinto,kidney,black bean, navy bean-whatever you like but these are the ones I use
3-4 boneless skinless chicken breasts
2 cans mild rotel tomatoes-you can adjust the hotness here.  I use 1 can rotel and 1 can diced tomatoes
1 small can diced green chilies.  Doesn't add heat just flavor
1 package each of Hidden Valley Ranch and Taco Seasoning

Put chicken in crock pot.  Pour seasonings over chicken.  Open cans of everything else.  Dump all including liquid into the crock pot.  Cook on low 6-7 hours.  I jump start mine on High for 2 hours then turn to low.

Serve with crushed chips on top and little bit of sour crème or salsa verde
This is a favorite!

We have a George Forman grill. We by ciabatta bread at SAMs, lunch meat, cheese (we like pepper jack and provolone), and get the sandwich spreads (we like chipotle, basil, and baconaise). Take a garlic butter, put on the outside of the bread, then build your sandwich with your favorite meats, cheese and spread. Cook for 5 minutes on the George Forman grill and you have a yummy Panani sandwich. We feed our family of 5 lunch daily.... Kids love it!

We get frozen meatballs from Sam's Club and put them in it with a can or two of spaghetti sauce and heat them up. Awesome subs that are quick and easy or you can take precooked noodles and actually have spaghetti  :) we have also gotten Alfredo sauce and had the meatballs that way and they are amazing!

We also take a ham hock roast and a giant can of greenbeans and start it the night before and by lunch the next day its really good too.

Sometimes we will take a pork roast and sour kraut and do it overnight too

We also do the chili, that is like the best meal at a show that is cold. Warms you up and is hearty and filling.

I almost always will make a giant batch of mashed potato's to take along and the kids eat them with cheese and sour cream as a "snack"

If I had to pick what gets eaten the fastest of my suggestions it would probably be the meatballs. I can get 2 HUGE bags of them from Sam's and they just scarf them down.

We always take a microwave too, that way you can heat the left overs up without heating it all up in the crock pot. We also take a mini fridge to shows that are more than 3 or 4 days, it makes things really nice with 4 kids there.

Thanks for the link, she has some good recipes.  We will definitely try those out.
