FAT % IN FEEDS

I know theres been tons of posts on what feed is best, yadda yadda yadda . . .
we had planned on feeding showmaster but just too high for us this year, we're feeding a 12 1/2 % protein and a 2% fat, our locals have done well on the feed in the shows almost all have either had class champs or at least made the sales the past few years.  the thing is I know everyone has a little trick here or there they give there calves.  I don't think theres enough fat in the feed. 
when I was a kid the calves were those big 'ole tall guys like chis and such and I still got one too fat back then, still haunted by that today! 
so . . . not to get finished too soon, would you add any additional fat to the feed thru the summer or wait till fall if you have Jan, Feb, Mar 10 shows?  and what and how do you measure the actual percentage that they get??  we have access to great cottonseed would that work?
any and all thoughts and advise GREATLY appreciated!  thanks

also meant to ask, what difference on a heifer vs. a steer fat and protein wise.  thanks again!
