Feeding and adding flank to a show steer?

We recently just bought a show steer. He is out of Polygraph and an angus cow. My guess on current weight is about 700 lbs. What I am wanting to know is what all do you all feed that will still keep hair, but get 'em fat enough to do well? We tried Moorman's last year. It did keep the hair but the calves didn't have that soft look to them.  Also, this new steer is just a tad bit high flanked. Is there anything special that you all do to get it to drop? Any help is appreciated.

Not much you can do to add flank to a calf.  The previous poster is right--genetics is the only sure fix.  That said, none are perfect and the slightly shallow flank may be offset by the steer's positive attributes.
