They are probably referring to yield grade in therms of "lean" and genetically it is possible (while rare) to even have a Yield Grade 1 and grade Prime (a girl I went to college had a show steer do it) but it takes superior genetics and the right production scenario.

That makes sense. I guess I was thinking of it from the consumers point of view rather than a slaughter point of view.

I get what your saying... marbling is fat.. fat is not lean no matter how you look at it so lean marbling is contradictive.

Meat can have marbling and still be lean, In the picture below it is hard to see but both carcasses have similar marbling but the carcase on the right is by no means lean, while the one on the left is very lean.

you can have that bright red steak with no fat on or in it, I'll take my with marbling and a thin layer of external fat thank you.

Marbling and external fat are different, calves start developing marbling early in the feeding process, external fat at the end of the process. (When fed properly)

the outer fat, back fat, is higher in cholesterol than marbling.

so as VC said well marbled can still be lean in consumer terms

I understand but when I wrote my post I was trying to think in terms of some relatives that no nothing of the cattle industry. In the store when shopping they believe that any white flecks are bad. Fat equals bad. They are health nuts by the way. If they hear the term lean they buy. Its so hard to explain how the consumer thinks some things are so much better for them. Myself I want marbling and lots of it. I can trim the outside fat if I think its too much.

Obie105 The beef market did this to them selves in the 80's, everyone started health kicks and beef was bad. The beef industry (not cattle industry) start pushing lean beef, no fat no marbling, but it also came with no flavor.

27 months before they are finished, run with their mothers for 16 months?  Holy Cow!  It better be some awesome tasting beef.  Maybe it is?
