I have a calf that weighs around 125 or so. He has pretty much no fat content (he's half jersey) so I need to get some meat on him in a hurry. Not sure of the best way to do this. I'm feeding him 2 bottles a day and he also has grain and hay

How old? What is the fat and protein percentages of the replacer?

Bottle fed calves don't put the pounds on as fast as momma fed calves. I am assuming the calf is still fairly young, keep up your feeding and he will start putting the weight on.

I'm wondering why you think you need to add fat to a calf that young? At this point it's more about keeping him healthy and not pushing his stomach too hard. But if you want to maximize growth then you should be splitting his milk into multiple feedings spaced evenly (like every 8 hours or every 6 hours) to mimic their natural feeding dchedule. If you aren't willing to do that, then just accept he's gonna grow a little bit slower to start.
