I'm about 5'11" and I will probably not grow more than a few inches more.. Do I want a 60"/5' or a 68"/5'8" stick?

Just long enough to move the back legs on a calf without turning the head at the same time. Not sure what length that would be without going to the barn and measuring, and I am too tired to do that right now.

Im 5 11 and like using the 68. If showing a big steer, hfr, bull... you can reach the back legs easier than using the 60. you can also reach to put the tail down. If you have to reach with the show stick and pull the head towards you while reaching they will not set up as easy and might move on you. I recommend the long stick even more for little kids simply because they can't reach. Doesn't take long to get used to it.

Our kids use the 68, extra length is helpful and not really a downside to it.
