Turns out that he was the hardest calving, trainwreck of bull you could breed your cows to.

nothing is wrong with the picture.  it's why they don't sire unpredictable calves, ie big and small like the ones you listed.  it is the unappreciated side benefit of moderation that most people find objectionable.
