Pushing them without burning them out

My steers are weighing between 5-600 pounds so they're a little behind where I want them.  Would a good rule of thumb be 2% is steady 2.5 is ideal and 3 of their body weight is pushing. I want to get them going but not burn out early what's the best way to do that

slowly increase feed until their stool starts to loosen...the balance between scours and loose stool is as hard as you can push them..dont forget hay at night...
