On the auction site you can create stores as well as placing items for sale on the auction. You can enable a reserve, a starting bid price and a "buy out" price. There is also a "reverse auction" feature.
A "reverse auction" basically starts out and a bidder has to bid LOWER than the previous bid to win the auction. IE- Someone wants to have an animal hauled and is willing to pay $1000 for that service. People hauling can bid less than that to win the auction. Same could go for a specific item- IE- a straw of semen from a specific sire.
There is also a calculator for the beef people to aid in figuring sales costs:
