Some steers I bought today (pics are worth a look)

I am back buying for a packer after a few years off. All our cattle go straight from grass to the plant. I found these F2 and F3 wagyu x Holstein steers and heifers on a 15 acre block in a town of 40 000 people 5 years of age. Weight ranges between 700 to 900kgs. Something you don't see every day (not a bad thing)

I visited a feedlot in northern NSW a few weeks ago. They had a heap of Wagyu, Wagyu/Holstein and Wagyu/Angus. The amount of fat sitting on these animals was staggering, and they still had about 30 to 40 days to go. They just seem to lay it down so easily. Interestingly, the manager of the feedlot - which only feeds black cattle - said they prefer the Wagyu's to Angus because they don't have the health issues which the Angus seem to be really susceptible too. They keep the Wagyus in the pens furthest away because they are less likely to have to bring any of them in for treatment, or to the sick pen. I found this really interesting because looking at some of the animals, you wouldn't think they were terribly sound!

How much of a premium would these cattle receive vs a more traditional market size animal?

What are your normal market goals in Australia?  Just Curious.

External fat
Marbling

What are your normal market goals in Australia?  Just Curious. For us we have a big focus on the domestic market
Carcass weight 260 to 340 kg dressed
External fat 8 to 15 mm
Marbling We have a score system 1 to 10 . 1 being no marbling 10 a 500 day wagyu so a score 2 up
Ribeye Bigger the better
