We have a Monopoly x Simm/Angus first calf heifer that we will be breeding in May.  She is very stout/clubby.

Just new to this.  Any thoughts on what to breed to?

If you still want a good calf, you could consider Mercedes Benz or Comfort Zone.

northern improvement is a good choice..I-80 would work real well but I'm just not convinced on him yet as calving ease for clubby heifers

Leaning to I-80 or Mercedes Benz. Do most people use 2 straws per heifer? Any thoughts?

I'd go I-80 too. bred my kids show heifer to him last year(shes a  Hannibal x wmw) but smaller framed and she threw a 65lb heifer calf probably best i've raised.

Northern Improvement makes nice replacement females. Beautiful udders and milk great. I used NI on Simmi x WMW have been pleased with results. Have not touched a calf. Bred her back to Dream On. Another nice heifer from the mix. It's stacking angus but save you a lot of heartache.
