I rinse about every other day in the winter if I can, we have some shows we go to, as well as sales.  As long as you get the calves dry quick, and get them COMPLETELY dry, you should be ok.  We still use the Kleen Sheen/Vinegar mix, but bring it inside so it doesn't freeze at night.  We don't walk them a WHOLE lot in the winter, but they have a pretty decent sized run to mosey around in when we're not working with them.
