Since we were discussing steaks on another thread, I thought I would ask how long most of you leave your beef hanging before processing.  Our local locker cuts everything up 7 days after slaughtering as a rule.  I make them hang our 21 days before cutting it up.  I like a dry aged piece of beef...

The orders I submitted will be delivered late this week and the beginning of next week.  I will relay a report when I hear from the recipients.

There were a lot of condolences this past week for Kent Haberger's family on this site and BW.  I know Marti and her sons appreciated them.  Their pastor even posted a thank you to all those that posted.  The funeral home had a place on their site to do the same.  I thought it was interesting...

For many years I have sent some of our customers a box of steaks for Christmas. Jim's Meats in Iowa is who I used, but Jim sold his company this past year and the new owners no longer offer that services.  Do any of you have ideas on who to use?  I know about Omaha Steaks, Kansas City Steaks...

Oh Holy Night hands down for me.  Almost anyone can sing it and I still get goose bumps thinking about what happened over 2000 years ago for all of us that want to believe.
