    It happens quite a bit I would guess.  Buying from a reputable breeder solves a lot of these problems.  On a lot of these clubby deals I would make sure the seller understands that you believe you are bidding on a papered animal before you bid on the calf.  It seems like an unnecessary step but...

    Tenderness varies more animal to animal than it does between breeds.  A breed as a whole might be slightly more tender than another breed but the animals within that breed would have much more variation.  So it is very possible that the test is correct.

    I think if you feed him well you have a nice project.  He looks well balanced and sound.  I will agree about being finer boned but by the time he gets fat I think he will have adequate depth.
