Another way to sort the cattle would be to invite one or more collegiate judging teams to look over the cattle.  Our daughter is on a team, and they are always traveling to different sales to use the cattle for judging.

Might be a little small to do two animals at once.  Ours is 18' x 18'.  That seems about right for two.  Gives room on all sides so you're not stepping on each other.  Ours is an area within a larger barn, not a separate room.  Sometimes they don't want to go through a door into a room.
