The reserve grand champion steer at Wisconsin State Fair in 2006 was a steer that did not get a $900 bid at Carrousel Farm's pasture sale. It got 3rd in its class at the county fair and then 2 weeks later sold for 30K  and set the state record. I would say it doesn't matter how much you spend...

One trick that seems to work really well for us is taking a scrub brush and just brushing them dry. It will take a very long time but it seems to work very well.

I personally think you should take the top 8 from each breed and then have the champions in one big bracket at the end. It would be much easier for people to compare. OR I would break it up to older bulls ( 2004 and older) and New-er bulls (2005-2011) this way some of those old foundation...
