Upgrade is really consistent but they can have a little leather up front. A Step Up is easy calving and the calves are really clean fronted. Just depends on what you want.
I have had the best luck with the 7- 10 year olds. I have found that you can find good solid cows at 7 or 8 years old that will give you the least trouble. (be really picky about their udders) If I was going to start over I would buy two really good cows that were exactly where I wanted to be...
I would go Simmental. Use purebred bulls that are proven and you can't go wrong. I like Upgrade, A Step Up, and Uno Mas. These are very consistent bulls in my experience and should click well with most Angus. You may want to check if you can get sexed semen on Uno Mas he is a safe bet on anything.
I would try mixing two cap fulls of white vinegar with water in a spray bottle. Mist the calf and work it into its skin for a couple of days. It works on show calves with dandruff.
