Getting them at the right weight

so I have a steer that I am debating on what class to go at either 1315 or the class under around 1275. From what I know the best way to move their weight is the amount of  water they drink. If I dont water them till i weigh in I can probably move up quite a bit but theres no definete that he will drink the water since it will alot different then what he is used to.  Anyone have any tips gatorade in the water is one I have heard.

We always bring water from home.  We show the same evening that we weight in and then sell the next day.  They seem to drink the local water okay the next day, but they always get water from home the day of judging to make sure they drink enough.
