Clinic for charity

I have been working on starting a show cattle clinic in my area were all proceeds go to charity, I am curious to know what would be some good categories other than major topics we should be focusing on with the kids? Also any suggestions on how to promote this clinic? Major categories would include hair care, nutrition, showmanship etiquette, clipping, fitting, did I miss anything? Thanks in advance !
