I have to disagree. You can feel freshness as well as feel for the "proper" covering. Not too much and not too little. Even when feeling for the finish, judges continue to struggle with finding that "choice" or "prime" marbleing. It is impossible to "see" that a calf is finished correctly.

There were some VERY nice calves that left the ring without being pulled. I guess it can happen when there is 40 to 50 in the class. One class, I think it was the light weight Maines, was a complete mess. There were steers everwhere. It took them a bit but they finally got them all sorted out...
