What bulls work best for 2nd calvers for calving ease?  The cows are out of club calf bulls.

I would use Grizzly Bear, I-80, Carpe Diem, Monopoly Money. I usually don't worry too much once they have their first calf, but the bulls I listed are ones that will/have gave me good calves with lower BW's.

Would Mercedes Benz work? I haven't used him but just bought semen to use in my herd. Just wondering what bw's to expect.

We bred a Heatwave (2nd calf) and Milkman (1st calf heifer) to him this year.
The Heatwave had a heifer calf that weighed 75lbs and was 6 days late.
The Milkman heifer had a 84lb bull calf that was 6 days early.
The pic is of the Mercedes x Milkman

You can safely use Mercedes Benz.  If your Benz calves are too big (90 plus) you may have some serious cow-side birthweight genetics to deal with when you start breeding to the clubby bulls.

What about Maternal Perfection?
From what I had been seeing pictures of they seemed to be smaller calves. I also talked to Wade Rodgers about him and he said that at that point they had been hearing of smaller BW's.
