bone marrow shank meat

my sister made this awesome shank meat marmalade or something and threw the shank bones in with the meat.  it had 2 bottles of port and one of wine reduced and a couple of other things.

both the marrow and the meat was totally awesome.  we had this at a restaurant that buys beef halves, so she decided to make it at home.

i can't believe how awesome it is.  the recipe called for oxtail, but we didn't have any.

I don't think most people want to spend the time to prepare. If you can package and freeze it... Probably would sell in the frozen cases.

don't know.  i'll follow up.  out here after looking over some commercial cattle all weekend, i think she would do real well out here.
