Camera Question

I'll start by saying that I know this topic has come up in the past but most of the information I found when I searched was older and outdated.  I'm looking at getting a new camera and have $600 to $700 dollars to spend on it.  I want something that will work well for picturing cattle and that isn't extremely difficult to learn to use.  What would you suggest?

Walmart is closing out the rebel tx2i. You have to check all walmarts, but it's worth it. $1400 camera for $800.
