Cattle fitter question

Was wondering if many of the cattle or steer fitters do market lambs?  Posted over in the lamb section was looking for a fitter, but thought the best folks fitting animals are those fittin' cattle, so I figure some do it?

When poodle butts went out of style so did the lamb fitters. Shave'em tight and bone the legs then use a rolling pin to smooth the fat. Done

I can handle the body part but legs boning and blocking sometimes gives me trouble...definitely need some learning.
