Holding a steer and keeping him fresh??

We have a steer we need to hold for about 30 days.  Can anyone tell me what and how to do that and keep him fresh looking??

I was thinking beet pulp but not sure on how much to feed or if there is something better out there.
Any help would be greatly appreciated.

Purina Full Control works well in those situations.
