Thought this might be fun! We all have a favorite cookie/bar/candy recipe this time of year. What's yours & can you share it with us?

Here are two of mine. the first is a favorite of the hubby's!

Butterscotch Cream Cheese Bars
Estimated Times:
Preparation - 15 min | Cooking - 32 min | Yields - 48 bars (4 dozen)

These cream cheese bars have a sweet, butterscotch graham crust and topping.

Ingredients:

1 2/3 cups (11-oz. pkg.) NESTLÉ® TOLL HOUSE® Butterscotch Morsels
6 tablespoons butter or margarine
2 cups graham cracker crumbs
2 cups chopped walnuts
2 packages (8 oz. each) cream cheese, softened
1/2 cup granulated sugar
4 large eggs
1/4 cup all-purpose flour
2 tablespoons lemon juice

Directions:
PREHEAT oven to 350° F.

MICROWAVE morsels and butter in medium, uncovered, microwave-safe bowl on MEDIUM-HIGH (70%) power for 1 minute; STIR. Morsels may retain some of their original shape. If necessary, microwave at additional 10 to 15-second intervals, stirring just until morsels are melted. Stir in crumbs and nuts. Reserve 2 cups crumb mixture; press remaining mixture into ungreased 15 x 10-inch jelly-roll pan.

BAKE for 12 minutes.

BEAT cream cheese and sugar in large mixer bowl until creamy. Add eggs one at a time, beating well after each addition. Beat in flour and lemon juice. Pour over crust; sprinkle with reserved crumb mixture.

BAKE for 20 to 25 minutes or until set. Cool in pan on wire rack. Cut into bars or diamonds; refrigerate.


This one I get requests for the recipe whenever I fix them! Common Sense- look for these in your package!

Chocolate- Butterscotch Rice Crispy Bars
1 cup Karo corn syrup
1 cup peanut butter
1 cup sugar
Melt these together & add 6 cups rice krispies. Place is a greased 13 x 9 pan. Pat down firmly
Melt 1 large package of butterscotch chips & 1 package of chocolate chips together. I use the microwave for this. Spread this over the rice krispies & allow to harden. Cut into squares & hide them unless you don't want any!

magic bars are my favourite.  i add a slight modification.  you need at least 1/2 inch of graham cracker crumbs on the bottom so modify recipe to put more on the bottom including the butter.  yeah it hits the bottom of your stomach like a lead pipe, but the are good

Serve these bars warm with vanilla ice cream and topped with chocolate sauce and "magically" it becomes a fancy restaurant dessert.
INGREDIENTS:

    * 1/2 cup butter
    * 1-1/2 cup graham cracker crumbs
    * 14 ounce can sweetened condensed milk
    * 1 cup (6 ounces) semisweet chocolate chips
    * 3-1/2 ounce can (1-1/3 cups) flaked coconut
    * 1 cup walnuts or pecans, chopped

PREPARATION:
Preheat oven to 350 degrees. Place butter in a 9X13 baking pan. Melt in oven. Remove pan from oven and carefully tilt pan to spread melted butter around. Sprinkle graham cracker crumbs over melted butter. Pour sweetened condensed milk over the crumbs. Top with remaining ingredients. Bake 25 minutes. Cool. Cut into bars.

COFFEE TOFFEE BARS

2 1/4 c. flour
1/4 tsp. salt
1 c. brown sugar
1 tbsp. instant coffee
1/2 c. nuts, chopped (optional)
1/2 tsp. baking powder
1 c. butter
1 tsp. almond extract
1 c. (6 oz.) chocolate chips

Cream butter and brown sugar, blend in almond extract and coffee. Add dry ingredients which have been sifted together. Stir in chocolate chips and nuts. Press dough into 15 x 10 inch pan or on cookie sheet. Bake at 350 degrees for 25 to 30 minutes, until slightly browned. Frost if desired with Almond Glaze.

ALMOND GLAZE:

1 tbsp. butter, soft
1/8 tsp. almond extract
3/4 c. powdered sugar
1 tbsp. milk

Frost while warm.              use the instant coffee you like, ie folgers, etc.

here's another one that's a little different but very pretty for the holidays.

Andes® Peppermint Crunch Chunkies

Ingredients:

2 sticks (1/2 Lb.) unsalted butter, softened
1 cup dark brown sugar, packed
1/3 cup granulated sugar
1 large egg
2 tsp. vanilla extract
1/2 tsp. baking soda
1/2 tsp. salt
1 3/4 cups all-purpose flour
1 cup old fashioned rolled oats
1 cup sweetened grated coconut
1 1/4 cups coarsely chopped pecans, toasted
1 1/2 cups Andes® Peppermint Crunch Baking Chips

Directions:

Preheat oven to 300° F.

Using an electric mixer, cream the butter, brown sugar and granulated sugar until fluffy (about 3 minutes).

Beat in egg and vanilla extract.

On low speed, add baking soda, salt and then flour. Mix completely.

Stir in oats, coconut, pecans, and Andes® Peppermint Crunch Baking Chips.

Measure out 2 Tbs. for large or 1 Tbs. for small cookies. Place round balls on lightly greased cookie sheets two inches apart. Press lightly.

Sprinkle some of the remaining chips on top of each cookie.

Bake for 20 minutes for large cookies or 12-15 mins. for small cookies Do not over bake.

They get crunchy on the outside but remain soft inside. Remove from cookie sheet and let cool.

Yield approx.: 30 - 3" or 60 - 1 1/2" cookies.

Prep Time: 30 min Total Time: 42 min Makes: 52 cookies or 26 servings, two cookies each 1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened 3/4 cup  (1-1/2 sticks) butter, softened 1 cup sugar 2 tsp.  vanilla 2-1/2 cups flour 1/2 tsp.  baking soda 4 squares BAKER'S Semi-Sweet Baking Chocolate, melted 1 pkg.  (6 oz.) BAKER'S Premium White Baking Chocolate 12 hard peppermint candies, crushed PREHEAT oven to 350ºF. Beat cream cheese, butter, sugar and vanilla in large bowl with electric mixer on medium speed until well blended. Add flour and baking soda; mix well. Blend in semi-sweet chocolate.

Chill dough for about an hour so it shapes better. SHAPE tablespoonfuls of dough into 52 balls. Roll each ball into 3-inch-long rope. Place, 2 inches apart, on baking sheet, bending top of each slightly to resemble a candy cane.

BAKE 10 to 12 min. or until lightly browned; cool 5 min. on baking sheet. Transfer to wire racks; cool completely. Microwave white chocolate as directed on package; drizzle over cookies. Sprinkle with crushed candies. Let stand until chocolate is firm.

I promised Red I would share my Mama's old fashioned sugar cookie recipe, so here goes!

Mix:  3/4 cup soft shortening, 1 cup sugar, 2 eggs, 1 teaspoon almond flavoring
Sift and stir in:  2 1/2 cups flour, 1 tsp. baking powder, 1 tsp. salt.

Chill for at least 1 hour.
Roll out to a thickness between 1/8 and 1/4 inch thick.  Cut out in shapes.
Place on ungreased baking sheet.  Bake for 6-8 minutes in a 400 degree oven.

Cool and frost with a simple frosting/glaze made of powdered sugar, milk and butter.  Decorate.  Eat with a glass of milk!

I usually add almond flavoring to the frosting too.  I have also made these with lemon flavoring instead.  Makes 3-4 dozen cookies.
