As some of you know, we sell meat @ Farmer's markets. I've been asked or told that Jersey, Jersey cross cattle have the best tasting meat several times over the past 10 years or so, in fact it came up in conversation again just last week. Red do you know or what are some of the rest of your opinion's as to Jersey beef. The reason Omaha Steaks use mostly HO beef is B/C it's cheaper and they go in and hand pick carcasses hanging, but if you pay attention to, let's say Fillets, the muscles are not as big, so they cut it thicker to get the same oz. cut which most people looking @ it are impressed. If you will also notice that Omaha Steaks has a marinade that they use to make it taste very similar time and time again. Not an over whelming taste, in fact very sutle taste. We all forget also that there are more HO cross or straight bred HOs than any other breed of cattle.

Brent- the Jersey meat has yellow fat. Maybe people see yellow fat & think richness?

Didn't some use Holstein in their Angus to raise the frame size back in the 70's?   That kind of back fired when mule foot showed up. 

I don't know about everyone else, but I think a good Jersey cow is pretty.. not that I'd want one but they are nice to look at.   

Q: The main drawback to using Jersey Bulls as calving-ease Sires for Beef Heifers?

              A: Puttin'up with a mean, ol'Jersey Bull!!!!!!!!!!!! Red Wasps are more docile.

you better believe it GB, the cows are the best but the bulls the meanest. My cousin was gored by one. Wore a bag the reast of his life to pee into.

You aren't kidding about Jersey bulls - or any of the dairy bulls - but Jerseys are the worst.      That's why if we ever use a Jersey as a heifer bull, he's gonna live in a straw in a tank.

  Red, the meat is different colored also. Jersey make great Gomer bulls, but again their disposition is quirky @ best.

My mom lived on a big dairy in Mississippi way back when and she still laughs when she tells the stories about their Jersey bulls.  One ran one for their workers up a thorn tree and they had to cut the tree down to get him down.  She says they are the meanest bulls alive.

I know many old timers that swear by jersey meat.  Says its the best they have ever tasted.

Back about '80 or so, I showed a couple of Brown Swiss / Angus cross steers. One made the premium sale at our county, back when only about the top 25% of 100 or so sold, the other was 4th alternate (for the premium sale) cross at the Tulsa State Fair, meaning he was in the top 20% or so of steers there. They were, for that time, very moderate sized, and fairly thick. Everybody thought they were Maine's...

As I recall, back in those days, Amerifax or Beef Fresian cattle weren't uncommon, and were often found in the pedigrees of percentage exotic cattle. Not sure if the exotic papers would've indicated those as any different than Holstein...
