When do you know your show heifer has enough condition?

We have a march 2010 simmy heifer our target show is in Feb 2012. She is eating 23 lbs. A day and a flake of sorghum hay. I think she is on the verge of being overconditioned. Should we back off on the feed? Any suggestions. When do you feel your show heifers have enough condition?
