What's a good Bull breed to use on these type of Cows?

Base cowherd here is/was just that... Fleckvieh-influenced 3/4AN-1/4SM.  Commercial herd, producing/selling weaned calves... no showring aspirations or seedstock sales, top AI-sired heifers usually retained.

Used several solid red Shorthorn sires over the past 8-9 years... some nicked well, others, less so.
Braunvieh-sired calves out of those 3/4-1/4 cows and their Shorthorn-sired daughters have been terriffic.

With all of the good options in the Angus bred. I'd suggest selecting a Angus that has the traits you're looking to add. If you plan on retaining females find an Angus with good maternal traits. Retain the 7/8 AN and 1/8 SM daughters and cross them to a PB Simmental bull. In our herd we keep PB Simmental cows and cross to Angus and think the 50/50 cross makes the best cow.

Another option would be to use a 3/4 SM and 1/4 AN (maybe HPF Optimizer) and get to the 50/50 mix right away. You might not have as much hybrid vigor but i think it's still a great option.

We have a fat butt x patron that is a dandy.  Gentle, easy doing, and lot of gas in the tank.  Granddaughter will try him next spring.

What do you ant to do with the offspring?  Press the scales? Use them to make show steers? eplacements?

One great option would be The Creature. We’ve used him on a few of our angus influenced cows and they are the best calves in the field right now. They take off when they hit the ground. Sadly he is quite under used in the club calf industry.

Steers by most all the Shorthorn sires we used performed far better than any Angus sires we'd used in the past 10 years, and were comparable to those sired by high WW epd Simmental sires.  On the female side... there were significant differences.

Across the board, Waukaru Goldmine 2109 left a bunch of nice daughters, as did Waukaru Coppertop 464; only got two daughters by Waukaru GoldCard 5042, but they're really nice.
Waukaru Orion 2047 sired terrific steers, but the daughters have been a big disappointment... hard-keeping, no-milk... nearly starve their calves.  Waukaru Patent 8161 sired good steers... only one daughter made the cut to stay... will calve this fall... jury is still out on her.
A&T Captain Obvious 606S... no 'grow' to 'em... have one daughter... looks kinda like a bison cow... is an average producer... raising twin SM-sired calves this spring.
Rob Sneed '034'... steers and heifers alike were pretty good... I mainly use him over large-framed cows... daughters have mostly been worth keeping... I like them pretty well.
ArSuLu McKenzie... only a few calves by this old bull... steers were OK, no daughters have made the cut to stay, so far.

We've switched back, breeding back toward the Simmental side of the equation... even using a full Fleckvieh sire over some of the older cows this spring... Shorthorn semen in the tank will be used sparingly, and mostly on a few select halfblood Shorthorn females.
