feeding the not so showy ones…

trying to figure out what to do with the not so showy ones.
Seeking info (fact, research or solid personal experience) concerning feeding operations; their pros and cons.  Such as fattening cattle out on grass (does this really promote frame growth more than muscle?) (several years back I had a real hairy Poll Premier heifer rolling in fat with intensive grazing…) 
Does the meat look different on the rail with differing feed stuffs (diff grains and diff grasses?)
I know, not the run of the mill questions.  But you all seem like a sharp bunch with lots of years in the game.

perhaps you need a worse looking feed truck to feed better looking calves? sorry, couldn't resist.

protein promotes growth.  starch promotes fat.  if grass has more starch than protein, they will get fat.

look up sucraseed.

but are there direct relationships between the feed stuff and the look of the muscle on the rail?

(after the turnip truck dumped me off I got right to the questions...)
