Those of you that sell freezer beef, what premium do or would you add for hormone free?

Whatever you can get, I guess.

You realize this is a bogus claim, right?
All beef contains 'hormones' - even nonimplanted steers will have normal amounts of bovine growth hormone and some testosterone (mainly from adrenal glands).
Intact cows/heifers have MUCH higher 'hormone' levels in their meat than any implanted steer.

I live in Indiana, what is the going rate for freezer beef?

Good rule of thumb is the price of a lb of ground beef in your area x hanging weight. Customer pays processing.

That is pretty much what we have done in the past too! Price of ground beef x hanging wt!

I just we a flat rate. If its family I sell a quarter for 350, they pay processing. Normal customers are 400 a quarter, they pay processing. It has worked well for me. Although next years will probably be in the 450 range. I've never had anyone complain. I spend a premium on my genetics compared to the avg farm. Just like most of the folks on here do as well with your genetics.  The grass fed deal sells itself around me. Can make enough of it.
