I just purchased a grey steer and I'm wondering what kind of paints I would use to build his legs?

Go to the hardware and buy some paint that is close to the same color as your steer. Then you can use that as your finish coat and you can still layer the white in over the adhesive.  We do this with red steers as well since it seems you can never find the exact shade from a show supplier.  Good luck.
Also PRACTICE with the new color of paint before the show. Can be kind weird to use at first and steer away from gloss paints.

Woodland Farms, how would you get the paint out? It doesn't come out like show paint does it?

What I would do is build it like normal with white then dust it with a white and black at the same time or white and brown or try brown and black too. A light dusting of one or the other might do the trick too. The is though like was said before is to practice and experiment with different mixes and colors. Sullivan's also carries a smoke touch up that might be worth a try.
