If I could do it all over and had a 36 x 36 shell to work with, this is what I would do.
First off, I would wire the thing to the max. Outlets every 8 feet, on circuits that would allow 2 double blowers to run at the same time.
Build a wall going right down the middle so you would end up with two halves each 18 x 36.
Turn half of the building into a cooler with an 8' wide concrete walk going all the way across the back so that fans could be easily rolled around on it. You can tie your babies in there during breaking season, and during show season, you have a good size cooler that you can put stall dividers in, and rotate the calves around. You will have tons of room for some serious fan volume. I would plumb the cooler with 2" PVC pipe that is hooked to double blowers that are hard mounted to the outside of the cooler. That way all you will be dragging around in the cooler is the blower hose.
On the other side, I would pour the whole thing concrete. Install some panels and posts for a wash rack, maybe build little feed room (or not), set up clipping chutes, and plenty of room for show equipment.
Then I would install a propane heater so that I could heat the whole thing in the winter time.
