What does it take to qualify as a Hereford or Polled Hereford steer in Texas and other states?
Is a white crest required?  What about pigment around the eyes?  White on the legs?  I'm sure the white on belly needs to be conservative?
Does having registration papers help at all?
What criteria to classifiers use?

You are not allowed to bring registration papers to the classification.  The 'official' guidelines...

Ideal Breed Characteristics:
- Must exhibit physical characteristics of a purebred Hereford(Horned or Polled)
- Red body with white face, white underline, and white marked legs
- Feather neck

Acceptable Breed Characteristics; (In any combination may be discriminating)
- Dark red color
- Red neck
- Solid red or solid white ear, ear size and shape is questionable
- Excess white on legs
- Excess white above underline
- Excessive eye pigment
- Black hair in tail, ear, or on rear end of animal
- Black spotting/smut, or freckling on the nose
- Line back
- White above the switch in tail
- White across the rump above the twist

Discriminatory Breed Characteristics:
- Coarse joints, head or ribs
- Straight line white marking on legs
- White above hocks, on the outside and back side of rear legs
- Excess pigment or color around the eyes
- Red neck in combination with excess white on legs

Absolute Disqualifiers:
- Diluter color pattern
- Brindles
- Double muscle
- Any color other than red or white

On a practical note, go to Showchampions.com and look at the steers that placed in the Hereford classes at San Antonio and Houston.
